Bò Tái Chanh - Raw Beef with Lime Salad

Garlic loves raw beef so I thought I would have her try out this raw beef salad. This dish is a little different than the previous raw beef salad because it is cooked by the lime/fish sauce dressing. Vietnamese râu răm(coriander), which has a spicy kick to it, and white onion are the others ingredients.

Bún Bò Huế - Spicy Beef Noodle Soup

First attempt at cooking it and it came out alright. I feel that it is harder than other noodle soups I had cook because it requires a lot of preparation and many ingredients; one particular ingredient is lemon grass both finely chopped and whole stalks.

Thịt Heo Kho - Slow cook pork

During my childhood years, when I was still living in Vietnam, my grandma used to cook Thịt Heo Kho for every Chinese New Year as far as I can remember. When I moved to the States, my mom had also cooked it from time to time. Her thịt kho was yummy, she served it with bean sprout, chives, & lite vinaigrette dressing salad to ease the greasy taste from the pork. I slow cook the pork in coconut juice for 2 hours and the coconut helps to soften the pork without having it fall apart.

Beef Salad started the weekend

We had asked each other throughout the day about planning for dinner. I was not in the mood to cook any fancy stuff and Moon felt the same way. When I got home from work this afternoon, Moon suggested that we make our favorite salad for dinner. I was happy that she picked it because I felt the night is calling for a beef salad also. :-) It is an easy dish to make, and it took us less then 30 mins from start to end. Moon is happy and stuffing herself to the last bit of beef salad. I learned how to make it from my Thai friends and I changed a few ingredients to suit my taste.

Kimchi Stir Fried Rice & Cold Cucumber Soup with Seaweed

Today I made one of my favorite summer dish, cold cucumber soup. It's a perfect dish for hot summer days. Cucumber and rice vinegar in the soup gives a very refreshing and clean taste. In order to make it extra cold, I dropped a few cubes of ice in the soup. My mom would make this for me often during summer time, and I would drink it in a second! Another favorite dish of mine is kimchi stir fried rice. This is a great dish to get rid of leftover rice and such. As long as you have kimchi and rice, you are good to go! Once you make this you will smell like kimchi stir fried rice from head to toe the whole day, but it tastes fantastic! Who cares what you smell like as long as the food is to die for, right??? :)

Mystery Korean Cookie

This is a Korean cookie I used to eat as a kid (it's more of a dessert to me because it's very sweet), and I spotted it last weekend while Andrea and I were grocery shopping at a Korean market. So I had to grab one. I tried to find out the name of it, but unfortunately I couldn't.. :(
